Gluten- and Sugar-Free Chocolate Cake

This delicious chocolate cake is free from flour and sugar, getting its natural sweetness from dates and orange juice. The ganache adds a luxurious finish, while fresh fruits and berries provide a refreshing contrast. Perfect for any occasion! And a perfect result in your Invoq oven.

 

Ingredients:

Cake
Juice of 1 orange
300 g pitted dates
150 g almonds
3 tbsp pure cocoa powder
1 tsp ground cinnamon
1 tsp vanilla powder
3 tbsp sunflower oil
3 tbsp coconut oil
1/4 tsp salt
4 eggs
Butter or cooking spray for the pan

 

Chocolate Ganache
200 g dark chocolate
3 tsp butter
2 dl heavy cream

 

Decoration
Fresh fruits and berries, e.g., nectarines and raspberries

Chef's tips

To enhance the chocolate flavour in the cake, try adding a couple of tablespoons of strong brewed coffee to the batter. The coffee accentuates the depth of the chocolate without adding a pronounced coffee taste. This will give the cake an even richer and more complex flavour, truly elevating the whole experience.
