Restaurant Clemens: Culinary Star in Randers, Denmark

Restaurant Clemens is a new and upcoming gourmet restaurant in Randers, owned by the entrepreneur and kitchen manager Casper Dahl. With a focus on Nordic cuisine, sustainability, and local produce, the restaurant has quickly made a name for itself in the culinary world. The signature dish, a delectable beef wellington, is a standout on a menu that also boasts an array of local fish and seafood offerings. 

Transparency is a core value at Restaurant Clemens, where the open kitchen concept allows guests to witness the skilled chefs at work using high-quality ingredients. The intimate setting, with seating for 34 guests, creates a warm and welcoming atmosphere. Casper and his trainee Claus run the restaurant with a calm and composed demeanor, ensuring every guest receives the exceptional quality they expect.

A key feature of the open kitchen is the HOUNÖ CombiSlim, the centerpiece combi oven that captures immediate attention. The restaurant greatly benefits from the oven’s steaming capabilities, which alleviate pressure on the stove and deliver consistent quality results.

With limited space, we like to use the CombiSlim due to its physical slimness yet comprehensive inner and features.

CombiSlim’s Versatility

Besides steaming and grilling, the CombiSlim excels in baking as well. “We use the oven frequently for baking bread because it is very consistent, and the breads always come out perfectly even.” 
 
The CombiSlim’s CombiWash automatic self-cleaning system simplifies maintenance at the end of a busy shift. This compact yet powerful oven offers all the features one would expect from high-capacity combi ovens. Casper concludes, “HOUNÖ ovens are no doubt the best ovens.” 

We steam vegetables, potatoes, eggs, and white fish, and the results are impeccable. With the CombiSlim, we can steam fish at a mere 42°C, which other ovens cannot.

Casper’s culinary journey doesn’t end here. Restaurant Rebelsk will be open just next door to Restaurant Clemens this summer. With seating for 70 guests, this new steakhouse is poised to become a go-to destination for steak lovers and food enthusiasts alike.
