Proving temperature:
The key to perfect dough  

Temperature is one of the most important factors in achieving a successful proof. With the Invoq Bake oven, you can set the precise temperature and humidity needed to produce consistent results with every batch. You can set the temperature down to 30°C.  

For example:

Low temperature setting

32°C for 45 minutes, ideal for larger loaves of 400–800 grams. 

High temperature setting

36°C for 25 minutes, suitable for rolls and baguettes of 60–200 grams. 

Additionally, you can control the fan speed (recommended at 30-50%) to ensure even distribution of heat without drying out the dough. This level of precision helps prevent under- or over-proving, guaranteeing a perfect rise every time.  Exercise caution when proving pastries with a high butter content, as the butter may begin to melt at temperatures above 30°C. 

How to use the Invoq Bake’s proving function  

The Invoq Bake oven offers a straightforward proving mode, accessible right from the main menu. Here’s how it works: 

  1. Go to the Main Menu, select Advanced, and then touch Proving. 
  2. Adjust the proving settings by selecting the temperature and timer according to your dough’s requirements. 
  3. For continuous proving, select the Cont. button, allowing the oven to maintain the set conditions for as long as needed. 

With these features, the Invoq Bake makes it easy to achieve professional results without needing a dedicated prover.
