Sunset Boulevard is a fast-food concept restaurant chain specialising in fast-casual menus with a key focus on high-quality ingredients and results. With a goal of providing their customers with a memorable and engaging experience that goes beyond the traditional dining outing, it is essential to achieve cohesive and consistent menu offerings. For that reason, they opted for the Invoq oven.

Quick Select Recipes

The recipes developed for Sunset Boulevard’s specific needs in cooperation with HOUNÖ’s Development Chef Jens Bach Sørensen are programmed on the Invoq ovens.

Preparing bacon has been one of our trickiest challenges over the years. Now, our staff can simply start the recipe program and wait for the alert to sound. It does not become a matter of opinion on how crunchy the operator in question likes the bacon, as it has been pre-assessed by chefs, so the result leaves no surprises. For me, working with our quality assurance, this gives me peace of mind knowing that we reach our desired results every time,

Making service simple

As for the majority of the foodservice industry, staff renewal is also common at Sunset Boulevard. However, training in using the ovens is an efficient process. “The oven is super intuitive and simple to use. Our staff is guided step-by-step on everything from when to load the trays to how to conduct the cleaning cycle.”

The restaurant chain is using recipe programs for all their oven-prepared items. Yet, very different programs whether it is for chicken, bacon or focaccia to take full advantage of the ovens features and steam technology for the best possible results. The programs have been added as favourites in a locked user interface with the essential functionalities at hand. “All our recipes are pre-programmed with an extra step making it possible to add extra time, if, for instance, the meat has not fully thawed before being loaded into the oven. This gives flexibility to the staff although still in a reliable and controlled cooking environment.”

Fastly expanding, Sunset Boulevard has numerous locations throughout Denmark and is now also emerging on the German and Norwegian market. “It is highly beneficial that the Invoq oven has multiple language settings. We will be able to utilise the exact same programs across boarders receiving at headquarters the documentation and food safety files we need for quality control”, Anne Goldek concludes.
